Thai Turkey Burgers with Guacamole

A healthy alternative to the classic burger. My Thai Turkey Burgers are very quick and easy to make. Are absolutely delicious, can be grilled, fried or BBQ. If you want to use chicken, that's fine. Once you've made guacamole, you'll never buy it ready-made again.

For 4, you will need

450g free range turkey breast (skinned)
2 teaspoons green thai curry paste
1 egg yolk
Salt and pepper
2 ripe avocados
2 chillies
A handful of coriander (the stalks as well)
3 tomatoes
1 small onion
1/2 lime, juice only
4 baps (I like to use wholemeal with these burgers but white are fine too)
Iceberg lettuce
olive oil

It's this easy:

Prepare & chill burgers

Cut the turkey up in to big chunks, place in a food processor with the curry paste, egg yolk, a pinch of salt and pepper and blitz for at least 30 seconds

Separate the turkey mix into 4 equal size balls, form into burger shapes and place in the fridge to chill for 30 minutes

Make the Guacamole

Wash your processor bowl, then add the coriander, chillies, 1 of the tomatoes, onion and a pinch of salt, blitz for 20 seconds

Add the lime juice and avocados, pulse to a chunky consistency (add a splash of water if you think it’s a bit dry)

Cook the burgers

Put a large frying pan on a medium-high heat and add the olive oil

Fry the burgers for 10-12 minutes or until cooked through, turning occasionally

Pull the lettuce into strips and slice the tomatoes

Slice the baps and build the burgers

Serve with a nice salad
