Sausage Casserole

There is nothing like a rich comforting meal on a cold winter's night. My sausage casserole is perfect for warming you up. Lots of beans, so it fills you up too. Serves 4 people.

You can use any mustard you like, but reduce it by half if using english (unless you love it).

Serve with mashed potatoes if you're really hungry.

You will need

3 medium-sized onions, peel and cut the onions in half, then cut each half into 4-6 pieces
2 tablespoons olive oil
3 large cloves of garlic, finely sliced
1 teaspoon of fennel seeds
2 bay leaves
8 thick, good quality pork sausages
2 tins of chopped tomatoes
200 ml red wine
250 ml water
2 tablespoons wholegrain mustard
3 cans butter beans, drained (don't rinse)

It's this easy

Heat the olive oil in a casserole dish or large pan over a low to moderate heat

Put the onions in the dish and brown, stirring occasionally

Add the garlic, fennel seeds and the bay leaves to the onions, stir, then remove all the contents from the dish

Put the sausages in and lightly brown them all over

Add the red wine and reduce by half, then add onions, chopped tomatoes, water and half the mustard

Simmer for 3-4 minutes

Add the beans to the sauce, season with black pepper and salt (taste before adding the salt, the beans would have added some)

Simmer gently for 20-25 minutes, then stir in the rest of the mustard
