Mussels in Cider
Very quick, very easy and very tasty. An ideal lunch for two.
You will need
1 tablespoon olive oil
1 medium-sized onion, peeled and chopped
1 fresh bay leaf
½ teaspoon crushed black peppercorns
2 cloves of garlic, whole, unpeeled
500g bag of mussels
250ml medium or dry cider
It's this easy
Debeard and wash the mussels, discard any that are broken or remain open when tapped
Heat the oil in a large pan and fry the onion with the bay leaf, crushed peppercorns and garlic, till the onion starts to brown
Add the cider to the pan and bring it to a gentle boil
Add the mussels, place a lid on the pan and steam for 2-3 minutes, discard any that do not open.
Serve with crusty bread to mop-up the broth
