Festive Baked Ham
A decorative Festive Baked Ham is no common garden gammon, this one is special.
You will need
1 gammon joint, about 2kg
For the stock
3 tablespoons black treacle
1 teaspoon cloves
1 teaspoon of ground nutmeg
2 bay leafs
1 teaspoon allspice
1 tablespoon black peppercorns
Peel of 1 orange, cut into thin strips
For the glaze
5 tablespoons dark brown sugar, plus extra to sprinkle
1½ tablespoons dijon mustard
Finely grated zest of 1 orange
1 tablespoon ginger wine
Handful of cloves
It's this easy
Put the ham in a large pot, and cover with cold water. Add the treacle, spices and bring slowly to a simmer, skimming off any scum.
Simmer gently for about an hour and a half.
Preheat the oven to gas mark 7/220ºC.
Remove the ham from the liquid and allow to cool 15-20 minutes, before carefully trimming off the skin, leave as much fat beneath as possible.
Score the fat in a diamond pattern.
Mix together the glaze ingredients into a thick paste, and brush the paste all over the fat, studding the intersections with cloves.
Put the ham in a foil-lined roasting tray.
Place into the hot oven for 25 minutes, basting twice and adding a sprinkle of sugar each time, bake until the glaze is caramelized and bubbling.
Allow to cool.
