Chicken (pork, beef, duck or mushroom) Chow Mein
Another quick and easy Chinese dish this week that will feed 4 people. The secret to a good Chow Main is 4 things; it must be sweet, sour, salty and spicy.
As with all stir fries, get all the chopping and slicing done before you start cooking. Feel free to add or remove anything to this dish.
If you like mushrooms, chuck some in. Don't like it spicy, then forget the chilli. Ginger is also good, especially if using pork.
You will need
300g medium egg noodles
600/700g skinless chicken breast fillets sliced into strips. Pork tenderloin or beef fillet tails or duck breast work just as well
Mushrooms for a veggie option (ignore the cornflour bit)
Freshly ground black pepper
1 heaped tablespoon cornflour
2 tablespoons groundnut oil
2 small chillies, finely chopped
2 cloves of garlic
3 large spring onions, 2 chopped into about an inch and sliced length ways, 1 chopped for decoration
1 red pepper, very finely sliced (optional)
150g bean sprouts (optional)
2 tablespoons soy sauce
2 tablespoons rice wine or white vinegar
1 tablespoon brown sugar
It's this easy
Bring a large pan of water to the boil and put your wok or large frying pan on a high heat
Place the chicken strips in a bowl and season with a dash of soy sauce and pepper. Mix well, then lightly dust the chicken strips with the cornflour and mix to coat all the chicken
When your wok is smoking add the groundnut oil, then the chicken and stir fry for 3-4 minutes, or until the chicken is golden-brown and cooked through
When your chicken stars to brown, place the noodles in the water
Add the spring onion, chilli, garlic and other vegetables to the chicken and stir fry for 2 minutes
Pour in the soy sauce and rice wine and sprinkle on the sugar and stir fry for 30 seconds
With a ladle, add some of the water from the noodles to the chicken to make the sauce. A little at first, you can add, but you can't take away
Drain the noodles and place into bowls, add the chicken and sauce
Sprinkle the rest of the spring onion over the top
